6 Lychees in Syrup
6 Glacé Cherries
750 ml Diet Ginger Beer
6 Tbsp Fresh Lime Juice
180 ml Rum
Peel the lychees and carefully push a glacé cherry into each one. Once the lychee splits to reveal the cherry, secure it in place with a toothpick.
Fill 6 highball glasses with ice cubes and pour 30ml dark rum into each glass.
Top each with 125ml light ginger beer and 1 tbsp lime juice.
Stir gently and serve decorated with the skewered lychee ‘eyeballs’.
